Vitamin C

Chemical formula: C₆H₈O₆
Solubility: Very soluble in water (33g/100mL), slightly soluble in ethanol, insoluble in lipid solvents
Stability: Extremely unstable (aqueous solution loses 50% activity in 4 hours), decomposes rapidly when exposed to light, heat, oxygen, alkali and metal ions
Appreance: White to light yellow crystals or powder (pure product is colorless), with a sour taste

Vitamin C, as a strong reducing agent, participates in various physiological processes:

  • Antioxidant effect: Clearing free radicals, regenerating vitamin E, protecting biofilms
  • Collagen synthesis: As a co factor of proline hydroxylase, it promotes wound healing
  • Immune regulation: enhance neutrophil chemotaxis and phagocytic function
  • Deficiency syndrome: leading to scurvy (gum bleeding, wound failure to heal)
  • Clinical application: prevention and treatment of scurvy, auxiliary treatment of infectious diseases, and promotion of iron absorption
