Gum Arabic is a natural gum obtained from the sap of the Acacia tree. It is rich in polysaccharides, primarily arabinogalactan and glycoproteins.

This product is widely used in the food industry as a stabilizer, emulsifier, and thickener. It is also applied in pharmaceuticals, cosmetics, and printing industries.

Main application scenarios of Gum Arabic

  • Gum Arabic prevents sugar crystallisation in sweets and effectively emulsifies milk fats in dairy-based confectionery to avoid separation. When used alone or with proteins in semi-aerated soft sweets, it retains a soft, chewy texture throughout their shelf life.
  • In dairy products like ice cream, Arabic gum absorbs moisture to create a finer internal structure, inhibiting ice crystal formation.
  • In baked goods, its natural viscosity gives bread products a smooth, cohesive texture.
  • For juices and beverages, Arabic gum’s pure, natural composition ensures stable emulsification.
